 Jayson is named for the Founder/Owner Jayson Pahlmeyer.

 

WINE DINNER MENU

First Course: Seared Tuna Salad with Raspberry Vinaigrette, Melon, Bleu Cheese & Walnuts

Second Course: Osso Bucco Gnocchi Speciale

Main Course: Roasted Lamb served with a Balsamic Fig Glaze, Fresh Figs, Goat Cheese & Green Beans

Dessert Course: Fresh Roasted Peach with a Mascarpone Cream & Toasted Almonds

Erin Green, current Winemaker, was the protégée of Helen Turley for many years. Under Helens tutelage, Erin worked with some of the most sought after cult labels as Sonoma-Cutrer, Harlan, Bryant Family, Colgin, Martinelli and Pahlmeyer. Erin was given the reins at Pahlmeyer in 2000.

 All the fruit that goes into the “Jayson” label is grown on Pahlmeyer owned estates in Napa and Sonoma.

 Jayson Chardonnay

Jayson Chardonnay offers yellow-green color, a nose melon, old fashioned citrus hard candy and honey. The mid-palate has great weight with flavors of glazed pineapple, vanilla and angel food cake. The finish is crisp and lingers long after the last sip with balanced and integrated fruit flavors.

 Composition: 100% Chardonnay

 

 Jayson Pinot Noir

Jayson Pinot Noir is saturated in red color. It has profuse scents of red currant and raspberry deepened by aromas of smoke and pancetta. Flavors of milk chocolate dipped strawberries are firmed up by allspice and mineral tones. This wine is approachable, juicy and creamy with a long lingering finish.

 Composition:  100% Pinot Noir

 

Jayson Red

Jayson Red offers toasty oak, tobacco, tar, graphite and earthy notes blended with spice, cherry, red berry and dark fruit flavors in this vibrant complex wine. This integrated, balanced wine ends with a finish that is long and persistent.

 Composition:  73% Merlot, 19% Cabernet Sauvignon, 6% Cabernet Franc

                            1.5% Petit Verdot, .5% Malbec
